Green cilantro and garlic sauce
The green sauce prepared with cilantro and garlic is widely used in Canarian gastronomy, this sauce has plenty of use. In the Canary Islands this sauce is known as mojo verde canario or simply mojo verde, ideal to give a touch of flavor to fresh fish, meat or also to accompany baked potatoes. It is a sauce that serves to highlight the flavor of your meals differently.
Ingredient
1 head of garlic
1 Deck of cilantro
50 ml of vinegar
250 Ml of olive oil
1 teaspoon cumin
1 teaspoon salt
Preparation
Green sauce is an easy and quick recipe. The first thing to do is to point the ingredients, start peeling and crush the garlic a little, also lava and chop the coriander leaves.
Then grind the garlic with salt, cumin and vinegar until a homogeneous mixture is obtained. For this step you can use a mortar and do it by hand or with an electric mixer or pica-todo.
To finish it incorporates the leaves of cilantro and tritura well and finally it sees adding the oil little by little without stopping to crush. Add a little salt to the sauce and correct the seasoning if necessary.
